5-Factor Lasagna
• 2 tablespoon basil, dried
• 1 cup(s) cheese, ricotta, fat-free
• 1 cup(s) tomato sauce
• 1 pounds tomato(es)
• 2 small eggplant
• cooking spray
• salt and black pepper
• 2 tablespoon Italian seasoning, dried
• 0.75 cup(s) cheese, mozzarella, shredded
  1. Preheat the oven to 400°F. Season the eggplant slices with salt and pepper and roast for 15 minutes.
  2. Coat a glass baking dish with cooking spray and cover the bottom with eggplant slices. Ladle some of the tomato sauce over the eggplant and top with some of the tomato slices. Sprinkle the tomato slices with basil, Italian seasoning, salt, and pepper. Spread ricotta over the tomatoes. Sprinkle with shredded mozzarella. Repeat the layers, ending with mozzarella.
  3. Bake for 20 minutes. Increase the heat to broil until the cheese turns golden.
  4. Cut the lasagna into slices and garnish with additional Italian seasoning.
 
Greek Pizza Roll Up
• 4 ounce(s) cheese, feta, reduced-fat
• 0.5 cup(s) tomato sauce
• 0.5 cup(s) spinach, frozen
• garlic powder
• 2 medium tortilla(s), flour, whole-wheat
• pepper, red flakes
  1. Preheat oven to 350 degrees.
  2. Place tortillas on a cookie sheet covered with aluminum foil. Spread sauce over tortilla, up to 1 inch from the edge. Sprinkle spinach and cheese over sauce. Top with seasonings as desired.
  3. Bake for 10-12 minutes or until thoroughly heated.
  4. Eat as is or roll up the tortillas to eat on the go.
